Serve bannocks to your children who have been outside washing their faces in dew and greeting the early morning faeries.

Scottish Bannocks

Ingredients

2 cups hot milk 1/2 tsp. baking soda
1 1/2 C. instant oatmeal 1 T. grated orange rind
1 egg 1 T. ground almonds
  • In a large bowl, pour the milk over the oatmeal; let sit for 10 minutes.

  • Beat in the remaining ingredients. The batter should be like thin pancake batter. If it is too thin, add more oatmeal. If too thick, add a little milk.

  • Heat griddle and grease.

  • Pour a little batter on the hot griddle. Cook until bubbles form.

  • Turn and cook on the other side.

    Serve with butter and honey. Makes about a dozen bannocks.
